These baked zucchini fries - Very easy to make & super yummy! I made these in my air fryer instead of baking, but need to tweak my cooking/frying time. The garlic lemon aioli was a great hit, as well.
INGREDIENTS
- zucchini fries
- 2 medium zucchini
- 1 egg
- 1 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian spice
- lemon parsley aioli (optional)
- 1/2 cup mayonnaise
- 1 lemon, juiced
- 1 garlic clove, minced
- 1 tbsp, finely chopped parsley
- salt and pepper
DIRECTIONS
- Preheat the oven to 425 degrees Fahrenheit and label two baking dishes with collector paper
- Cut the zucchini in half, then half again, then in quarters. You must have 16 slices per zucchini.
- Break the eggs in a small bowl or bowl and beat it gently.
- Add parmesan cheese and spices to a separate bowl or bowl and stir.
- Dip a slice of zucchini into the egg and move to parmesan. Use the other hand to cover the zucchini with cheese and transfer it to the baking sheet. Repeat this process until all the zucchini are covered.
- Bake for 25-30 minutes, turning halfway on the cut side. Service immediately.
- To make lemon parsley optional yolk, add all ingredients to a small bowl and mix.
